    Food analysts say the price of milk and dairy is expected to increase after the federal Canadian Dairy Commission recommended a record 8.4 per cent increase in the wholesale of milk. The last previous record increase was 4.54 per cent in 2017, which means this year it is almost double. According to the commission, it is meant to offset the overwhelming production costs due to the pandemic.

    Sylvain Charlebois, a Dalhousie University food policy expert said “in New Brunswick, for example, my guess is that fluid milk could go up by eight to ten per cent almost overnight in February,” The increase in milk will migrate to other dairy products such as yogurt, ice cream, and cheese.

    Charlebois explained “There is a multiplier effect,… For example, you need eight to 10 litres of milk to make one kilo of cheese. Obviously, it adds up, and so you could expect increases of 15 per cent, maybe, so that’s huge.”
